Denver’s Newest Rooftop Bar Debuts

Views, inventive dishes and playful cocktails await visitors to Rare Bird, Denver’s newest rooftop bar on top of HALCYON, a hotel in Cherry Creek. Boasting panoramic Rocky Mountain vistas, Denver marks the second outpost of Rare Bird, following the 2018 opening of Rare Bird Nashville.

Executive Chef Daniel Young crafts American-inspired dishes like white cheddar truffle popcorn, beet hummus, Rare Bird wings with mango buffalo sauce and more. The beverage offerings are inspired by the sky-high environment, featuring libations like Firebird, with blanco tequila, grapefruit, spicy basil syrup, agave and soda.

 

“After witnessing the incredible response and success we’ve achieved with Rare Bird in Nashville, we knew it was time to introduce our rooftop experience to a new audience,” said Andres Jimenez, SVP of Food & Beverage, Makeready, the management company behind Rare Bird. “Denver, with its vibrant culture and thriving culinary scene, was a natural choice for our expansion and Halcyon provides the perfect backdrop for Rare Bird. We look forward to welcoming guests and sharing our specialty cocktails paired with even better views.”

The rooftop is open daily, 3–10 p.m., Monday to Thursday; 12–11 p.m., Friday and Saturday; and 12–8 p.m. on Sunday.

Dive Deeper Into a Destination by Attending a Local Festival

I hadn’t even looked out the window of my hotel on the outskirts of Munich until the morning after my arrival. A delayed flight and a rainy late-night transfer from the airport kept my jet- lagged vision of my surroundings blurry as I checked into the only hotel available outside the city limits. I hadn’t booked that Bavarian bed and breakfast for its charming breakfast spread or its idyllic views of emerald pastures ebbing and rising in the distance, though I was quickly taken with its surprising beauty. Instead, I had booked it for its ideal distance between the airport and the festival grounds of Munich Oktoberfest, so I made a single note in my journal to come back to this place if my travels ever brought me back to Bavaria.
