Kimpton Hotel Palomar Phoenix prepares to debut Eden, its reimagined rooftop bar, on Jan. 18. Eden takes over the space formerly known as LUSTRE Rooftop Bar. Lead bartender Clint Spotelson will helm the rooftop bar’s beverage program, highlighting unique ingredients and house-made syrups designed to excite guests’ palates.
“Through Eden, we’re creating a revitalized rooftop experience for locals and hotel guests alike that matches the spirit and vibrancy of Downtown Phoenix,” said Jeremy Wilhide, general manager, Kimpton Hotel Palomar Phoenix. “Creativity and bold yet approachable flavors will be at the heart of our food and beverage program and combined with high-energy ambiance and experiential design, Eden will bring a refreshed energy to the neighborhood.”
Cocktails will include offerings like Garden of Eden, blending serrano- and cilantro-infused tequila, lime juice, agave nectar and Italicus; and Desert Sunset, with Arizona Distilling Company commerce gin, gran ponche, pistachio orgeat, lemon juice and egg white. The menu will also feature large-format cocktails and low- and zero-ABV options.
Mediterranean flavors and coastal cuisine crafted by executive chef Alexander Robinson will complement the spirits menu, with the culinary featuring innovative shared plates and tapas that rotate seasonally and boast mindfully sourced produce and meats.
