Top 5: Ways to Prepare Mushrooms in Spain

Fall is mushroom season in Spain, a time of year when hordes of families and scavengers head into the fields in search of the perfect pantry staple. After taking part in the time-honored tradition, celebrate your bounty by whipping up some classic Spanish recipes below.

 

Garlic Mushrooms

Mushrooms in a garlic seasoning or sauce are one of Spain’s most popular mushroom dishes. To prepare champinones al ajillo, sauté garlic and oil in a pan, then add the mushrooms and let it simmer. Parsley is a welcome addition for a bit of seasoning.

 

Spanish Omelet with Mushrooms

A traditional Spanish omelet includes eggs, potatoes and possibly a few spices. Throwing in mushrooms adds to the soft consistency of the quiche-like dish and rounds out the earthy flavor.

 

Grilled Mushrooms with Vegetables

With Spain’s signature olive oil, brush a few chopped mushrooms and grill them on an outdoor barbecue or inside with a grill pan. Toss on some autumn vegetables for a rustic meal. For a truly Spanish touch, sprinkle on some grated Manchego cheese.

 

Chorizo and Mushrooms

Slice and cook one of Spain’s most loved sausages with a touch of garlic, paprika and some dry white wine, plus a serving of button mushrooms.

Treat yourself to this southern Spain specialty by coating your mushrooms with the liquor and seasoning with nutmeg, salt and pepper.
